WThis is a simplified version of a beverage found on the seasonal drinks list. This is a batch prepared mix that's packed with essence of the holiday season, making it excellent for a holiday party. Reserve the remaining cordial to use in breakfast cocktails, sweets, or for another batch of the drink.
The Bikini Cocktail
Yields 10 servings
Ingredients for the Clementine Syrup (makes 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Drink (makes 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Cordial: Combine the listed components inside a pan, heat until it reaches a light boil, stirring to dissolve. Next, turn off the heat and let it to cool entirely. Decant into a sterilised bottle, cap it and store in the refrigerator, it can be stored for up to a month.
For the Cocktail Base: Combine the specified liquids into one sizeable container, allow it to infuse for 60 minutes, then pass it through best through a fine cloth, making it perfectly clear.
For serving: Pour 85ml from the premix to a mixing glass containing ice, and stir gently for about 60 seconds until cold. Filter to a chilled martini glass or similar, garnish with some cranberries and finish using a brief mist of mandarin oil over the top.
